      Urlich, S.L. (2006) Effect of peroxyacetic acid-based carcass wash on the onset of ‘blown pack’ spoilage of vacuum-packed chilled venison 
          
          In a recent study funded by MWNZ, the Food Safety Group at Ruakura, showed that peroxyacetic acid, a chemical agent now approved by FSANZ for use as a carcass rinse, significantly inactivated Clostridium estertheticum spores when used alone or in combination with heat treatment. The study investigated the activity of peroxyacetic acid against Cl. estertheticum spores in venison.
